Malaka is chef Jonay Armas\u2000s most personal project, inspired by years of experience in different countries in the Asiatic Continent.<\/span><\/p> After starting his education in his native Tenerife, Jonay travelled to the Spanish mainland and Europe, working in outstanding well-known international restaurants such as <\/span>El Chafl\u00e1n,<\/span><\/i>, <\/span>La Terraza del Casino,<\/span><\/i>, <\/span>El Rac\u00f3 de Can Fabes,<\/span><\/i>, <\/span>NOMA,<\/span><\/i> o <\/span>El Celler de Can Roca<\/span><\/i>, later moving to India, where he started his adventure in Oriente working for <\/span>Aman Resorts.<\/span><\/i>.<\/span><\/p> Years later he opened <\/span>The Principal<\/span><\/i> in Hong Kong and his work fronting this restaurant is recognised with a Michelin star in the 2013 edition, adding a second in 2015. In his last stage in Asia, residing in Bali, he continued to explore the flavours and ingredients of the local cooking.<\/span><\/p> On his return to The Canaries, he is starting a new stage fronting Malaka. As owner and executive chef, Jonay proposes to transfer the pure essence of Asian culture to the tables, transmitting to the diners his experience, gathered over years, through the food.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t Venezuelan with Uruguayan ancestry, Leidy Liz Levitan has accumulated years of experience \u201cover the stoves\u201d in such disparate places as Brazil, Argentina, or Kuwait, where she opened a restaurant for Giorgio Locatelli.<\/span><\/p> Her travels through Indonesia, India, Myanmar or The Maldives, working for companies such as <\/span>Accor Hotels<\/span><\/i>, have given her a thorough knowledge of the Asian kitchen, as well as the uses and social customs during the meal.<\/span><\/p> Leidy Liz brings this vital and gastronomic package to Malaka as head chef and co-owner, fully involved in bringing to Tenerife an authentic proposition and with profound respect for traditions.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t EQUIPO MALAKA EQUIPO MALAKA Jonay Armas – Executive Chef Malaka es el proyecto m\u00e1s personal del chef Jonay Armas, inspirado en sus a\u00f1os de experiencia en diferentes pa\u00edses del continente asi\u00e1tico.
